- 2Heat the remaining coconut oil in the same skillet. Add the onion and garlic and sauté until fragrant.
- 3Add the carrots and peas (or green beans) and cook for 2-3 minutes.
- 4Add the cauliflower rice and cook for 5-7 minutes, stirring occasionally, until heated through.
- 5Stir in the coconut aminos and red chili (if using).
- 6Add the cooked chicken or shrimp and scrambled eggs. Mix well.
- 7Season with salt. Serve hot.
