Paleo Nasi Goreng (Fried Rice)

A paleo-friendly version of the popular Indonesian fried rice, using cauliflower rice and coconut aminos for a delicious and healthy meal.

Ingredients

  • 4 cups Cauliflower rice
  • 1 cup Chicken or shrimp, cooked and diced
  • 1/2 cup Carrots, diced
  • 1/2 cup Peas
  • 1/2 cup Onion, diced
  • 2 cloves Garlic, minced
  • 3 tbsp Coconut aminos
  • 2 tbsp Coconut oil
  • 4 large Egg
  • 1 small Red chili, chopped
  • 1/2 tsp Sea salt

Instructions

  1. 1Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat. Scramble the eggs and set aside.
  2. 2Heat the remaining coconut oil in the same skillet. Add the onion and garlic and sauté until fragrant.
  3. 3Add the carrots and peas (or green beans) and cook for 2-3 minutes.
  4. 4Add the cauliflower rice and cook for 5-7 minutes, stirring occasionally, until heated through.
  5. 5Stir in the coconut aminos and red chili (if using).
  6. 6Add the cooked chicken or shrimp and scrambled eggs. Mix well.
  7. 7Season with salt. Serve hot.
