Paleo Mulukhiyah with Chicken and Jute Leaves

A flavorful and unique Egyptian stew made with jute leaves and chicken, adapted for a paleo diet. Traditionally served with rice, this version is delicious on its own or with cauliflower rice.

Ingredients

  • 2 lbs Chicken Pieces (Bone-In)
  • 4 oz Dried or Frozen Jute Leaves
  • 6 cups Chicken Broth
  • 6 cloves Garlic
  • 1 tsp Coriander
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Rinse the 2 lbs of Chicken Pieces under cold water. Place the rinsed chicken pieces into a large heavy-bottomed pot. Add the 6 cups of Chicken Broth to the pot.
  2. 2Place the pot over high heat and bring the liquid to a rolling boil, reaching 212°F (100°C). Once boiling, reduce the heat to low, maintaining a gentle simmer between 185-205°F (85-96°C). Cover the pot with a lid and simmer for 20 minutes, or until the chicken pieces are mostly cooked through and no longer pink in the center.
  3. 3While the chicken simmers, prepare the 4 oz of Jute Leaves. If using frozen leaves, let them thaw slightly at room temperature for 5-10 minutes until soft. If using dried leaves, ensure they are ready to be added to the pot.
  4. 4Mince the 6 cloves of Garlic finely. In a small skillet, heat the 2 tbsp of Olive Oil over medium heat, aiming for 350°F (175°C).
  5. 5Add the minced 6 cloves of Garlic and the 1 tsp of Coriander to the hot olive oil in the skillet. Sauté for 1-2 minutes, stirring constantly, until the garlic becomes fragrant and just begins to turn a light golden color. Ensure the garlic does not burn.
  6. 6Carefully pour the sautéed garlic and coriander mixture from the skillet into the large pot with the simmering chicken and broth. Stir in the 4 oz of Jute Leaves. Add the 1 tsp of Salt and the 0.5 tsp of Black Pepper, stirring to combine.
  7. 7Increase the heat under the pot to medium, aiming for 300°F (150°C). Cover the pot again and simmer for another 10 minutes, or until the jute leaves are tender and the stew's flavors have melded together. The chicken should be fully cooked, reaching an internal temperature of 165°F (74°C) when measured with a meat thermometer.
  8. 8Serve the Paleo Mulukhiyah hot. It can be enjoyed on its own or served alongside cauliflower rice.
