Ingredients

  • 1 cup Coconut flour
  • 6 large Eggs
  • 0.5 lb Smoked mackerel (flaked)
  • 0.5 large Red bell pepper (diced)
  • 0.5 medium Onion (chopped)
  • 0.5 small Scotch bonnet pepper (minced, adjust to taste)
  • 0.25 cup Palm oil
  • 1 cup Chicken broth
  • 0.75 tsp Salt
  • 6 pieces Plantain leaves (for wrapping)

Instructions

  1. 1In a large bowl, whisk together the coconut flour and eggs until smooth.
  2. 2Add the flaked smoked mackerel, diced red bell pepper, chopped onion, and minced scotch bonnet pepper. Mix well.
  3. 3Stir in the palm oil and chicken broth. Season with salt to taste.
  4. 4Line each plantain leaf with a portion of the mixture.
  5. 5Fold the plantain leaves to create a packet. Secure with toothpicks or twine.
  6. 6Place the wrapped moin moin in a steamer basket and steam for 40-45 minutes, or until set.
  7. 7Remove from the steamer and let cool slightly before unwrapping and serving.
