Ingredients

  • 1.5 lbs Shrimp
  • 4 cups Cauliflower Rice
  • 1 cup Pineapple
  • 1/2 cup Carrot
  • 1/2 cup Green Peas
  • 1/2 cup Red Bell Pepper
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 tbsp Coconut Aminos
  • 1 tbsp Lime Juice
  • 1 tbsp Coconut Oil
  • 2 stalks Green Onions

Instructions

  1. 1Heat coconut oil in a large skillet or wok over medium-high heat.
  2. 2Add shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove shrimp from skillet and set aside.
  3. 3Add onion, carrot, and red bell pepper to the skillet and stir-fry until softened, about 5 minutes.
  4. 4Add garlic and ginger and stir-fry for 1 minute more.
  5. 5Add cauliflower rice, pineapple, and green peas. Stir-fry for 5 minutes, until cauliflower rice is heated through.
  6. 6Stir in coconut aminos and lime juice.
  7. 7Return shrimp to the skillet and toss to combine.
  8. 8Garnish with green onions and serve.
