Paleo Älplermagronen with Bacon and Apple

Ingredients

  • 2 large Sweet potato
  • 8 oz Bacon
  • 1 large Apple
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 cup Chicken broth
  • 1 can Coconut milk
  • 0.25 cup Nutritional yeast
  • 2 tbsp Chives
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Peel and dice the sweet potatoes into small cubes.
  3. 3Chop the bacon into small pieces. Dice the apple and onion. Mince the garlic.
  4. 4In a large oven-safe skillet or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, reserving the bacon fat.
  5. 5Sauté the onion and garlic in the bacon fat until softened. Add the diced apple and sweet potato and cook for 5 minutes.
  6. 6Pour in the chicken broth and coconut milk. Season with salt and pepper. Bring to a simmer.
  7. 7Cover the skillet and bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.
  8. 8Remove from the oven and stir in the nutritional yeast and crispy bacon.
  9. 9Garnish with chopped chives before serving.
