Ingredients

  • 1.5 lbs Ground Lamb
  • 1/4 cup Almond Flour
  • 2 tsp Garam Masala
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 can Coconut Milk
  • 2 tbsp Tomato Paste
  • 4 cups Sweet Potato Rice

Instructions

  1. 1In a bowl, combine ground lamb, almond flour, garam masala, ginger, and garlic. Mix well and form into small kofta balls.
  2. 2Heat oil in a large skillet over medium heat. Brown the kofta balls on all sides and remove from skillet.
  3. 3In the same skillet, sauté diced onion until translucent. Add tomato paste and cook for 1 minute.
  4. 4Pour in coconut milk and bring to a simmer. Return the kofta balls to the skillet and cook for 25 minutes, or until lamb is cooked through.
  5. 5Serve lamb kofta curry over sweet potato rice.
