- 1Preheat your oven to 325°F (160°C). Cut the 2 lb Lamb shoulder into 2-inch cubes. Heat the 2 tbsp Olive oil in a large Dutch oven (or a large heavy-bottomed pot) over medium-high heat, then sear the lamb cubes for 8-10 minutes, turning occasionally, until they are browned on all sides. Using tongs, carefully remove the browned lamb from the pot and set it aside in a bowl.
