Paleo Jajangmyeon with Sweet Potato Noodles

A Paleo take on the popular Korean-Chinese noodle dish, using sweet potato noodles and a soy-free black bean sauce substitute. Requires precise wok skills and careful sauce preparation.

Ingredients

  • 1 lb Sweet potato noodles
  • 1 lb Pork belly, diced
  • 1/2 cup Black bean sauce alternative (e.g., fermented black bean and coconut aminos mixture)
  • 1 Onion, diced
  • 1 Zucchini, diced
  • 2 cups Cabbage, diced
  • 3 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1 tbsp Sesame oil
  • 2 tbsp Tapioca starch
  • 1/4 cup Water

Instructions

  1. 1Bring a large pot of water to a rolling boil over high heat (212°F / 100°C). Add the 1 lb sweet potato noodles and cook for 8-10 minutes, or until they are tender but still slightly chewy. Drain the noodles thoroughly in a colander and set them aside.
  2. 2Place a 12-inch wok or a large, heavy-bottomed skillet over high heat until it reaches approximately 400°F (200°C) and is very hot. Add the 1 lb diced pork belly and stir-fry for 5-7 minutes, turning occasionally, until the pork is golden brown, crispy, and firm.
  3. 3Add the 1 diced onion, 1 diced zucchini, and 2 cups diced cabbage to the wok with the pork belly. Continue to stir-fry over high heat for 4-6 minutes, until the vegetables have softened but still retain a slight crispness.
  4. 4Add the 3 cloves minced garlic and 1 tsp grated ginger to the wok. Stir-fry for 1 minute, until the mixture becomes fragrant, being careful not to burn the garlic.
  5. 5Pour the 1/2 cup black bean sauce alternative into the wok. Stir all ingredients together and cook over high heat for 2-3 minutes, allowing the flavors to combine.
  6. 6In a small bowl, whisk together the 2 tbsp tapioca starch and the 1/4 cup water until the mixture is completely smooth and lump-free. Pour this tapioca starch slurry into the wok and stir continuously over high heat for 1-2 minutes, until the sauce visibly thickens to a glossy consistency that clings to the back of a spoon.
  7. 7Add the cooked 1 lb sweet potato noodles to the wok. Gently toss the noodles with the sauce and vegetables over high heat for 1-2 minutes, ensuring all the noodles are evenly coated.
  8. 8Drizzle the 1 tbsp sesame oil over the noodles and toss one final time to combine. Remove the wok from the heat and serve the Paleo Jajangmyeon immediately in individual bowls.
