Paleo Irish Soda Bread with Almond Flour

Ingredients

  • 3 cups Almond flour
  • 1/2 cup Tapioca starch
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 4 large Eggs
  • 2 tablespoons Apple cider vinegar
  • 4 tablespoons Ghee or coconut oil, melted
  • 1/2 cup Raisins (optional)

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Line a baking sheet with parchment paper.
  3. 3In a large bowl, combine almond flour, tapioca starch, baking soda, and salt.
  4. 4In a separate bowl, whisk together eggs, apple cider vinegar, and melted ghee or coconut oil.
  5. 5Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. 6Stir in raisins, if using.
  7. 7Shape the dough into a round loaf and place it on the prepared baking sheet.
  8. 8Cut a cross into the top of the loaf.
  9. 9Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. 10Let cool completely before slicing and serving.
