Paleo Irish Smoked Salmon Scramble with Avocado

Ingredients

  • 4 large Eggs
  • 4 ounces Smoked Salmon
  • 1/2 medium Avocado
  • 2 tablespoons Coconut Milk
  • 1 teaspoon Lemon Juice
  • 1 tablespoon Fresh Dill
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Instructions

  1. 1In a medium bowl, whisk together the 4 large Eggs, 2 tablespoons Coconut Milk, 1/4 teaspoon Salt, and 1/8 teaspoon Black Pepper until well combined.
  2. 2Heat a 10-inch non-stick skillet over medium heat, which is about 300°F (150°C).
  3. 3Pour the egg mixture into the heated skillet. Cook for 3 to 5 minutes, stirring gently and occasionally with a spatula, until the eggs are mostly set but still look slightly moist and creamy.
  4. 4Gently break the 4 ounces Smoked Salmon into bite-sized pieces and add them to the skillet. Stir in the 1 teaspoon Lemon Juice. Continue to cook for 1 minute more, stirring gently, until the salmon is heated through.
  5. 5Remove the skillet from the heat.
  6. 6Slice the 1/2 medium Avocado and arrange the slices on top of the scrambled eggs. Sprinkle with the 1 tablespoon Fresh Dill.
  7. 7Serve immediately.
