Ingredients

  • 10 Eggs
  • 2 Zucchini
  • 1 Red Bell Pepper
  • 2 tbsp Olive Oil
  • 1/2 cup Dairy-Free Feta
  • 2 tbsp Fresh Mint
  • 2 tbsp Fresh Dill
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a large oven-safe skillet over medium heat.
  3. 3Add zucchini and bell pepper and cook until softened, about 8 minutes.
  4. 4In a large bowl, whisk together eggs, salt, and pepper.
  5. 5Pour egg mixture into the skillet over the vegetables.
  6. 6Crumble the dairy-free feta over the egg mixture.
  7. 7Sprinkle with fresh mint and dill.
  8. 8Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the frittata is set and lightly golden.
