Ingredients

  • 1.5 lbs Chicken thighs
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 28 oz can Tomatoes
  • 1/2 cup Sunflower seed butter
  • 2 cups Chicken broth
  • 2 tbsp Palm oil
  • 1 small Scotch bonnet pepper
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4 cups Cauliflower rice

Instructions

  1. 1Heat palm oil in a large pot over medium heat.
  2. 2Add chopped onion and cook until softened, about 5 minutes.
  3. 3Add minced garlic and grated ginger, and cook for another minute.
  4. 4Add chicken thighs and brown on all sides.
  5. 5Stir in crushed tomatoes, sunflower seed butter, chicken broth, chopped scotch bonnet pepper, salt, and pepper.
  6. 6Bring to a boil, then reduce heat and simmer for 30 minutes, or until chicken is cooked through.
  7. 7Serve hot over cauliflower rice.
