Paleo Emirati Date & Almond Stuffed Chicken Bites

Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1/2 cup Medjool dates, pitted and chopped
  • 1/4 cup Almonds, chopped
  • 2 tbsp Ghee
  • 1/2 tsp Ground cardamom
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Cut the 1 lb boneless, skinless chicken breasts into 1-inch cubes.
  3. 3In a medium bowl, combine the 1/2 cup Medjool dates (pitted and chopped), 1/4 cup chopped almonds, 1/2 tsp ground cardamom, 1/4 tsp sea salt, and 1/4 tsp black pepper. Mix well.
  4. 4Carefully cut a small slit into one side of each chicken cube. Gently stuff each slit with a small amount of the date and almond mixture. Press the slit closed as much as possible to keep the stuffing inside.
  5. 5Heat the 2 tbsp ghee in a 10-inch oven-safe skillet over medium heat.
  6. 6Place the stuffed chicken bites into the hot ghee. Sear them for 2-3 minutes per side, until they are lightly browned all over. This should take about 6-8 minutes total.
  7. 7Transfer the oven-safe skillet with the seared chicken bites directly into the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. 8Remove the skillet from the oven and let the chicken bites rest in the skillet for 5 minutes before serving. Serve warm.
