Ingredients

  • 2 lbs Pork shoulder
  • 2 lbs Sweet potatoes
  • 0.5 cup Coconut aminos
  • 0.25 cup Honey
  • 2 tbsp Rice vinegar
  • 1 tsp Five-spice powder
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 1 tbsp Sesame oil

Instructions

  1. 1Cut the 2 lbs of pork shoulder into 1-inch thick strips. In a bowl, combine the 0.5 cup of coconut aminos, 0.25 cup of honey, 2 tbsp of rice vinegar, 1 tsp of five-spice powder, 1 tbsp of ginger, and 2 cloves of garlic. Add the pork strips to this marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
  2. 2Preheat your oven to 400°F (200°C).
  3. 3Wash and peel the 2 lbs of sweet potatoes. Cut them into 1-inch cubes. Place the sweet potato cubes in a bowl and toss them with 1 tbsp of sesame oil until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet.
  4. 4Place the baking sheet with the sweet potatoes into the preheated oven. Roast for 25-30 minutes, or until the sweet potatoes are tender when pierced with a fork and have slightly caramelized edges.
  5. 5While the sweet potatoes are roasting, arrange the marinated pork strips from Step 1 in a single layer on a separate baking sheet. Ensure the pork is not overcrowded.
  6. 6Place the baking sheet with the pork into the oven alongside the sweet potatoes. Bake for 20-25 minutes, or until the pork is cooked through and has developed some charred edges. The internal temperature of the pork should reach 145°F (63°C).
  7. 7Remove both the pork and sweet potatoes from the oven. Let the pork rest for 5 minutes before slicing it against the grain into bite-sized pieces.
  8. 8Serve the sliced Char Siu pork alongside the roasted sweet potatoes.
