Paleo Bolo de Arroz Muffins (Rice Flour Muffins)

Ingredients

  • 1 1/2 cups Almond Flour
  • 1/2 cup Coconut Flour
  • 4 large Eggs
  • 1/2 cup Coconut Oil
  • 1/4 cup Honey
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt

Instructions

  1. 1Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. 2In a large bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  3. 3In a separate bowl, whisk together the eggs, melted coconut oil, honey, lemon zest, and vanilla extract.
  4. 4Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. 5Fill the muffin liners about 2/3 full.
  6. 6Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
