Paleo Boli (Roasted Plantain) with Spicy Avocado Sauce

Ingredients

  • 4 large Ripe plantains
  • 2 medium Avocado
  • 0.25 cup Red onion (chopped)
  • 0.5 small Scotch bonnet pepper (minced, adjust to taste)
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Peel the plantains and slice them lengthwise.
  3. 3Brush the plantain slices with olive oil and season with salt and pepper.
  4. 4Arrange the plantain slices on a baking sheet and roast for 20-25 minutes, or until they are golden brown and caramelized, flipping halfway through.
  5. 5While the plantains are roasting, prepare the avocado sauce: In a bowl, mash the avocados until smooth.
  6. 6Add the chopped red onion, minced scotch bonnet pepper, lime juice, salt, and black pepper. Mix well.
