Paleo Beef Kare-Kare with Peanut-Free Sauce

A hearty Filipino stew made with tender beef and a rich, flavorful sauce thickened with sweet potato and sunflower seed butter instead of peanuts.

Ingredients

  • 2 lbs Beef chuck
  • 1 large Onion
  • 4 cloves Garlic
  • 1 large Eggplant
  • 1 bunch Bok choy
  • 1 cup Green beans
  • 1 medium Sweet potato
  • 1/2 cup Sunflower seed butter
  • 6 cups Bone broth
  • 1 tbsp Annatto seeds

Instructions

  1. 1Place the 1 tbsp of annatto seeds in a small bowl and cover with 1 cup of warm water. Let them soak for 30 minutes to release their color.
  2. 2Cut the 2 lbs of beef chuck into 2-inch cubes. Peel and dice the 1 large onion. Peel and mince the 4 cloves of garlic.
  3. 3Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat (375°F / 190°C). Add the diced onion and minced garlic and cook, stirring often, until softened, about 5-7 minutes.
  4. 4Add the 2 lbs of beef chuck cubes to the pot. Brown the beef on all sides, about 8-10 minutes. Strain the soaking liquid from the annatto seeds, discarding the seeds, and pour the colored water into the pot along with the 6 cups of bone broth. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is very tender when pierced with a fork.
  5. 5While the beef simmers, peel the 1 medium sweet potato and cut it into 1-inch chunks. Place the sweet potato chunks in a small saucepan, cover with water, and bring to a boil over high heat (212°F / 100°C). Cook for 15-20 minutes, or until very soft when pierced with a fork. Drain the sweet potato and mash it until smooth.
  6. 6Once the beef is tender, stir the mashed sweet potato and the 1/2 cup of sunflower seed butter into the pot. Stir well until the sauce is smooth and has thickened, about 2-3 minutes.
  7. 7Prepare the vegetables: trim the ends off the 1 cup of green beans, cut the 1 large eggplant into 1-inch cubes, and separate the leaves of the 1 bunch of bok choy, cutting any thick stems into 1-inch pieces. Add the prepared eggplant, green beans, and bok choy to the pot. Cook, uncovered, for another 10-15 minutes, or until the vegetables are tender when pierced with a fork.
  8. 8Serve the Paleo Beef Kare-Kare hot. It is excellent served with cauliflower rice.
