Paleo Bak Kut Teh (Pork Rib Soup)

A hearty and peppery pork rib soup, adapted for a paleo diet. This comforting dish is made with a blend of aromatic spices and tender pork ribs.

Ingredients

  • 2 lbs Pork ribs
  • 8 cups Water
  • 2 tbsp White peppercorns
  • 10 cloves Garlic
  • 3 each Star anise
  • 1 each Cinnamon stick
  • 1 tsp Cloves
  • 6 each Dried shiitake mushrooms
  • 2 tbsp Coconut aminos
  • 1 tsp Sea salt

Instructions

  1. 1Blanch the pork ribs in boiling water for 5 minutes. Drain and rinse thoroughly.
  2. 2In a large pot, combine the blanched pork ribs, water, crushed white peppercorns, whole garlic cloves, star anise, cinnamon stick, cloves, and dried shiitake mushrooms.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until the pork ribs are very tender.
  4. 4Stir in coconut aminos and sea salt to taste during the last 30 minutes of cooking.
  5. 5Serve hot, garnished with extra white pepper if desired.
