Paleo Ajiaco with Chicken and Sweet Potato

A paleo version of the classic Colombian chicken and potato soup, using sweet potatoes, chicken, and a blend of herbs. Garnished with avocado and coconut cream.

Ingredients

  • 2 lbs Chicken Thighs
  • 3 large Sweet Potatoes
  • 8 cups Chicken Broth
  • 1 Onion
  • 3 cloves Garlic
  • 0.25 cup Guascas
  • 0.25 cup Cilantro
  • 1 Avocado
  • 0.5 cup Coconut Cream
  • 2 tbsp Lime Juice
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1In a large pot, combine chicken thighs, chicken broth, chopped onion, and garlic.
  2. 2Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. 3Add peeled and chopped sweet potatoes to the pot. Continue to simmer until the sweet potatoes are tender, about 20 minutes.
  4. 4Remove the chicken thighs from the pot and shred the meat. Return the shredded chicken to the pot.
  5. 5Stir in the guascas and cilantro. Season with salt, pepper, and lime juice.
  6. 6Serve hot, garnished with avocado slices and a dollop of coconut cream.
