Ingredients

  • 1 lb Wide Rice Noodles
  • 1 lb Shrimp (peeled and deveined)
  • 1 bunch Chinese Broccoli (Gai Lan)
  • 4 cloves Garlic
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 2 tablespoons Oyster Sauce (or vegetarian oyster sauce)
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sugar
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1Place the 1 lb Wide Rice Noodles in a large bowl and pour enough hot water over them to fully submerge. Let the noodles soak for 15-20 minutes, or until they are pliable but still firm. Drain the noodles thoroughly in a colander and set them aside.
  2. 2Wash the 1 bunch Chinese Broccoli (Gai Lan). Cut the stems into 1/2-inch pieces and the leaves into 1-inch pieces. Mince the 4 cloves Garlic.
  3. 3Heat the 2 tablespoons Vegetable Oil in a large 12-inch wok or skillet over high heat until it shimmers, reaching approximately 400°F (205°C). Add the minced 4 cloves Garlic and stir-fry for 30 seconds, until it becomes fragrant but not browned.
  4. 4Add the 1 lb Shrimp (peeled and deveined) to the wok. Stir-fry for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque, and an internal temperature of 145°F (63°C) is reached. Remove the cooked shrimp from the wok and set them aside on a plate.
  5. 5Add the 1 bunch Chinese Broccoli (Gai Lan) to the hot wok. Stir-fry for 2-3 minutes, until the stems are tender-crisp and the leaves are wilted.
  6. 6Add the 1 lb Wide Rice Noodles to the wok with the 1 bunch Chinese Broccoli (Gai Lan). In a small bowl, whisk together the 3 tablespoons Soy Sauce, 1 tablespoon Dark Soy Sauce, 2 tablespoons Oyster Sauce (or vegetarian oyster sauce), 1 tablespoon Rice Vinegar, and 1 teaspoon Sugar. Pour this sauce mixture over the noodles and stir-fry for 2-3 minutes, tossing constantly to coat the noodles evenly and heat them through.
  7. 7Return the cooked 1 lb Shrimp to the wok with the noodles and broccoli. Stir everything together for 1 minute to combine all ingredients and ensure the shrimp are heated through. Serve immediately.
