Ingredients

  • 1 lb Wide Rice Noodles
  • 1 bunch Chinese Broccoli (Gai Lan)
  • 2 large Egg
  • 3 cloves Garlic
  • 3 tbsp Soy Sauce
  • 2 tbsp Sweet Soy Sauce (Kecap Manis)
  • 1 tbsp Rice Vinegar
  • 2 tbsp Vegetable Oil
  • 1 block Protein of choice (Tofu)

Instructions

  1. 1Fill a large pot with water and bring it to a rolling boil over high heat. Add the 1 lb Wide Rice Noodles and cook for 2 to 3 minutes, or until they are tender but still have a slight chew. Drain the 1 lb Wide Rice Noodles immediately into a colander and rinse them thoroughly with cold water to prevent sticking; set aside. While the noodles are cooking, wash the 1 bunch Chinese Broccoli thoroughly and cut it into 2-inch pieces. Set the cut broccoli aside.
  2. 2In a small bowl, whisk the 2 large Eggs until the yolks and whites are fully combined and uniform in color. Set the bowl aside.
  3. 3Heat the 2 tbsp Vegetable Oil in a large wok or a 12-inch skillet over high heat, aiming for approximately 430°F (221°C), until it shimmers and a drop of water sizzles instantly. Add the 3 cloves Garlic, minced, and stir-fry for 30 seconds until fragrant and lightly golden.
  4. 4Add the 1 block Tofu, cut into 1-inch cubes, to the wok. Cook for 3 to 5 minutes, stirring occasionally, until the tofu pieces are browned and firm on all sides.
  5. 5Push the cooked 1 block Tofu to one side of the wok. Pour the whisked 2 large Eggs into the empty side of the wok and scramble them for 1 to 2 minutes, until they are just set and no liquid egg remains.
  6. 6Add the drained 1 lb Wide Rice Noodles and the 2-inch pieces of 1 bunch Chinese Broccoli to the wok. Stir-fry for 2 to 3 minutes, tossing constantly to combine the noodles, broccoli, tofu, and egg, until the broccoli brightens in color and is slightly tender-crisp.
  7. 7Pour the 3 tbsp Soy Sauce, 2 tbsp Sweet Soy Sauce (Kecap Manis), and 1 tbsp Rice Vinegar evenly over the ingredients in the wok. Continue to stir-fry for 1 to 2 minutes, tossing constantly, until all ingredients are evenly coated with the sauce and heated through.
  8. 8Serve the Pad See Ew immediately while hot.
