Nut-Free Scottish Porridge

A classic, creamy Scottish porridge, made safe for those with nut allergies. Uses certified nut-free oats.

Ingredients

  • 1 cup Rolled Oats (certified nut-free)
  • 3 cups Water
  • 1/4 tsp Salt
  • 1/2 cup Dairy-free Milk
  • 2 tbsp Maple Syrup (optional)
  • 1 cup Fresh Berries (optional)

Instructions

  1. 1Get a medium saucepan and add the 3 cups of Water and the 1/4 tsp Salt. Place the saucepan over medium-high heat and bring the water to a rolling boil, about 5-7 minutes. This is 212°F (100°C).
  2. 2Once the water is boiling, gradually stir in the 1 cup of Rolled Oats (certified nut-free). Immediately reduce the heat to low, so the mixture is just gently bubbling.
  3. 3Cook the porridge for 20 minutes, stirring occasionally to prevent sticking. The porridge is ready when it has thickened to a creamy consistency and the oats are tender. It should smell slightly nutty and warm.
  4. 4Remove the saucepan from the heat. Stir in the 1/2 cup of Dairy-free Milk until fully combined and the porridge is smooth.
  5. 5If you are using the optional ingredients, stir in the 2 tbsp Maple Syrup until combined. Serve the porridge hot, topped with the 1 cup of Fresh Berries if desired.
