Nut-Free Mpotompoto (Yam Porridge)

Ingredients

  • 1 lb Yam
  • 1/2 medium Onion
  • 2 medium Tomatoes
  • 1/4 small Scotch Bonnet Pepper
  • 1/2 cup Smoked Fish
  • 4 cups Vegetable Broth
  • 2 tbsp Palm Oil
  • 1/2 tsp Salt

Instructions

  1. 1Peel and cube the yam into 1-inch pieces.
  2. 2Chop the onion and tomatoes.
  3. 3In a pot, heat the palm oil over medium heat. Add the onion and sauté until softened.
  4. 4Add the tomatoes and scotch bonnet pepper and cook for 5 minutes.
  5. 5Add the yam, smoked fish, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the yam is tender.
  6. 6Use a wooden spoon to mash some of the yam to thicken the porridge.
  7. 7Season with salt to taste. Serve hot.
