Ingredients

  • 4 cups Palm Nut Cream
  • 1 lb Chicken Pieces
  • 3 medium Tomatoes
  • 1 medium Onion
  • 1/2 small Scotch Bonnet Pepper
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 1/2 cup Smoked Fish
  • 1 tsp Salt
  • 2 cups Rice
  • 4 cups Water

Instructions

  1. 1Boil rice in water until tender, around 20 mins, and set aside.
  2. 2Blend tomatoes, onion, scotch bonnet pepper, ginger, and garlic into a smooth paste.
  3. 3In a large pot, combine palm nut cream, chicken pieces, tomato paste, and smoked fish. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the chicken is cooked through.
  4. 4Season with salt to taste. Remove the chicken pieces and shred the meat.
  5. 5Return the shredded chicken to the soup. Serve hot with a side of cooked rice.
