Ingredients

  • 28 oz Canned Diced Tomatoes
  • 1 cup Fava Beans
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Red Bell Pepper
  • 4 large Eggs
  • 2 tablespoons Olive Oil
  • 1 tablespoon Harissa Paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Dice the onion and bell pepper. Mince the garlic.
  2. 2Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened.
  3. 3Add the garlic and harissa paste and cook for 1 minute more.
  4. 4Stir in the diced tomatoes, fava beans, cumin, and paprika. Bring to a simmer and cook for 10 minutes.
  5. 5Make four wells in the tomato sauce. Crack an egg into each well.
  6. 6Cover and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  7. 7Season with salt and pepper to taste.
  8. 8Serve hot with crusty bread, ensuring the bread is gluten-free.
