Nigerian Okra Soup with Shrimp

Ingredients

  • 1 pound Okra
  • 1 pound Shrimp
  • 1 medium Onion
  • 0.5 small Scotch bonnet pepper
  • 3 tablespoons Palm oil
  • 2 tablespoons Ground crayfish
  • 2 Vegetable bouillon cubes
  • 1 teaspoon Salt
  • Amala or eba (for serving)

Instructions

  1. 1Wash and chop the okra into small pieces.
  2. 2Peel and devein the shrimp.
  3. 3Blend the onion and Scotch bonnet pepper.
  4. 4Heat palm oil in a pot over medium heat. Add the blended pepper mixture and cook for 5 minutes, stirring occasionally.
  5. 5Add the ground crayfish and cook for 2 minutes.
  6. 6Add the chopped okra and stir well. Cook for 5-7 minutes, stirring occasionally, until the okra is slightly slimy.
  7. 7Add the shrimp, vegetable bouillon cubes, and salt. Cook for 5-7 minutes, or until the shrimp is cooked through.
  8. 8Serve the okra soup hot with amala or eba.
