Ingredients

  • 2 cups Long grain rice
  • 6 medium Tomatoes
  • 2 Red bell peppers
  • 1 Scotch bonnet peppers
  • 1 large Onion
  • 3 cloves Garlic
  • 2 tablespoons Tomato paste
  • 4 tablespoons Vegetable oil
  • 4 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Curry powder
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Wash the rice and set aside.
  2. 2Blend tomatoes, red bell peppers, scotch bonnet pepper, onion, and garlic into a smooth puree.
  3. 3Heat vegetable oil in a large pot over medium heat. Add tomato paste and cook for 2-3 minutes, stirring constantly.
  4. 4Pour in the blended tomato mixture and cook for 15-20 minutes, stirring occasionally, until the sauce thickens and darkens.
  5. 5Add chicken broth, dried thyme, curry powder, and bay leaf. Bring to a boil.
  6. 6Add the washed rice, salt, and pepper. Stir well.
  7. 7Reduce heat to low, cover the pot tightly, and simmer for 30-40 minutes, or until the rice is cooked through and the liquid is absorbed.
  8. 8Stir the rice gently with a fork before serving.
  9. 9Serve hot with grilled chicken, plantains, or vegetables.
