Nigerian Jollof Rice

Ingredients

  • 2 cups Long grain rice
  • 6 medium Tomatoes
  • 2 medium Red bell peppers
  • 1 small Scotch bonnet pepper
  • 1 large Onion
  • 1/2 cup Vegetable oil
  • 2 tbsp Tomato paste
  • 1 tbsp Curry powder
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1/2 tsp White pepper

Instructions

  1. 1Rinse the rice thoroughly and set aside.
  2. 2Blend tomatoes, red bell peppers, and scotch bonnet pepper until smooth. Set aside.
  3. 3Heat vegetable oil in a large pot over medium heat. Add chopped onion and cook until softened.
  4. 4Add tomato paste and cook for 5 minutes, stirring constantly.
  5. 5Pour in the blended tomato mixture and cook for 15-20 minutes, stirring occasionally, until the sauce thickens and reduces.
  6. 6Add curry powder, dried thyme, bay leaves, salt, and white pepper. Stir well.
  7. 7Add the rice to the pot and stir to coat with the sauce.
  8. 8Pour in chicken broth, ensuring the liquid covers the rice. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
  9. 9Remove from heat and let it sit for 10 minutes before fluffing with a fork. Remove bay leaves before serving.
