Nigerian Jollof Rice

Ingredients

  • 2 cups Long-grain rice
  • 2 cans Diced tomatoes
  • 1 medium Red bell pepper
  • 0.25 small Scotch bonnet pepper
  • 1 medium Onion
  • 2 cloves Garlic
  • 3 cups Chicken broth
  • 3 tbsp Vegetable oil
  • 1 tsp Thyme
  • 1 tsp Curry powder
  • 1 leaf Bay leaf
  • 0.5 tsp Salt
  • 0.25 tsp White pepper

Instructions

  1. 1Rinse rice in a fine-mesh sieve.
  2. 2Blend diced tomatoes, red bell pepper, Scotch bonnet pepper, onion, and garlic into a smooth paste.
  3. 3Heat vegetable oil in a large pot over medium heat.
  4. 4Add the blended paste and cook for 10 minutes, stirring occasionally.
  5. 5Stir in thyme, curry powder, bay leaf, salt, and white pepper.
  6. 6Add rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
  7. 7Remove bay leaf before serving.
