Nigerian Akara (Dairy & Nut Free)

Ingredients

  • 2 cups Black-eyed Peas
  • 1 medium Red Bell Pepper
  • 1/2 small Scotch Bonnet Pepper
  • 1 medium Onion
  • 1 teaspoon Salt
  • 3 cups Vegetable Oil

Instructions

  1. 1Drain and rinse the soaked black-eyed peas. Remove the skins by rubbing them between your hands in water.
  2. 2Blend the peeled black-eyed peas with red bell pepper, scotch bonnet pepper, and onion until smooth. Add a little water if needed to help the blending process.
  3. 3Pour the blended mixture into a bowl and season with salt. Whisk vigorously for about 5-7 minutes to incorporate air into the batter.
  4. 4Heat vegetable oil in a deep frying pan over medium heat.
  5. 5Using a spoon or your hands, carefully drop spoonfuls of the batter into the hot oil.
  6. 6Fry for 3-4 minutes per side, or until golden brown and crispy.
  7. 7Remove the akara from the oil and drain on paper towels. Serve warm.
