Ingredients

  • 2 cups White Rice
  • 2 cups Coconut Milk
  • 1 cup Water
  • 2 stalks Lemongrass, bruised
  • 3 leaves Bay Leaves
  • 2 slices Galangal, bruised
  • 1 tsp Salt
  • 1 cup Tempeh, fried
  • 4 large Eggs, fried or boiled (optional)
  • 2 tbsp Fried Shallots

Instructions

  1. 1Rinse the rice until the water runs clear.
  2. 2In a pot, combine the rinsed rice, coconut milk, water, lemongrass, bay leaves, galangal, and salt.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
  4. 4Fluff the rice with a fork.
  5. 5Serve hot with fried tempeh, eggs (optional) and fried shallots.
