Ingredients

  • 2 cups White Rice
  • 2 cups Coconut Milk
  • 1 cup Water
  • 2 leaves Bay Leaves
  • 1 stalk Lemongrass, bruised
  • 1 inch Galangal (or ginger), bruised
  • 1/2 teaspoon Salt

Instructions

  1. 1Rinse the rice under cold water.
  2. 2In a pot, combine the rice, coconut milk, water, bay leaves, lemongrass, galangal, and salt.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, or until the rice is cooked and the liquid is absorbed.
  4. 4Fluff the rice with a fork before serving.
