Nasi Goreng (Vegan Fried Rice)

Ingredients

  • 4 cups Cooked Rice
  • 2 cups Frozen Mixed Vegetables
  • 1 cup Tofu
  • 1/4 cup Sweet Soy Sauce (Kecap Manis)
  • 2 cloves Garlic
  • 2 small Shallots
  • 1 teaspoon Chili Paste
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1Place a 12-inch wok or large skillet over medium-high heat. Add the 2 tablespoons of vegetable oil and heat until it shimmers, about 1 minute.
  2. 2Add the 2 cloves of minced garlic, 2 small minced shallots, and 1 teaspoon of chili paste to the hot oil. Sauté, stirring constantly, until the mixture is fragrant, about 1 minute. Be careful not to burn the garlic.
  3. 3Add the 2 cups of frozen mixed vegetables and the 1 cup of cubed tofu to the wok. Stir-fry for 3-5 minutes, until the vegetables are slightly tender and the tofu is lightly browned.
  4. 4Add the 4 cups of cooked rice and the 1/4 cup of sweet soy sauce to the wok. Stir everything together well, breaking up any clumps of rice, until the rice is evenly coated and heated through, about 5-7 minutes. The rice should be steaming and fragrant.
  5. 5Serve the Nasi Goreng hot.
