Nasi Goreng Ayam (Chicken Fried Rice)

Ingredients

  • 4 cups Cooked Rice
  • 1 lb Chicken Breast, diced
  • 4 tbsp Sweet Soy Sauce (Kecap Manis)
  • 2 tbsp Soy Sauce
  • 3 small Shallots, minced
  • 4 cloves Garlic, minced
  • 1 small Chili Pepper, minced (optional)
  • 2 tbsp Vegetable Oil
  • 4 large Egg, fried (optional)
  • 2 tbsp Green Onions, chopped

Instructions

  1. 1Heat 2 tablespoons of vegetable oil in a 12-inch skillet or a wok over medium-high heat, which is about 375°F (190°C).
  2. 2Add the 3 small shallots, 4 cloves of garlic, and 1 small chili pepper (if using), all minced, to the hot oil. Sauté for about 2 minutes, stirring constantly, until they smell fragrant.
  3. 3Add the 1 lb of diced chicken breast to the skillet. Cook, stirring occasionally, for 5 to 7 minutes, until the chicken is browned on all sides and cooked through. The internal temperature should reach 165°F (74°C).
  4. 4Add the 4 cups of cooked rice to the skillet. Use a spatula to break up any clumps of rice.
  5. 5Pour the 4 tablespoons of sweet soy sauce and 2 tablespoons of soy sauce over the rice and chicken. Stir-fry everything together for 3 to 5 minutes, making sure the rice is evenly coated and heated through. The rice should be tender but not mushy.
  6. 6Serve the Nasi Goreng Ayam hot. Garnish with the 2 tablespoons of chopped green onions and a fried egg (if using).
