Nanaimo Bars (Gluten-Free)

A Canadian dessert classic made gluten-free! Layers of chocolate, custard, and coconut make this a decadent treat.

Ingredients

  • 2 cups Gluten-free graham cracker crumbs
  • 1/2 cup Unsweetened cocoa powder
  • 1/2 cup Granulated sugar
  • 1/2 cup Melted butter
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/4 cup Custard powder
  • 3 cups Powdered sugar
  • 3 tablespoons Milk
  • 4 ounces Semi-sweet chocolate chips
  • 1 cup Coconut Flakes

Instructions

  1. 1Base Layer: In a medium bowl, combine the gluten-free graham cracker crumbs, cocoa powder, granulated sugar, melted butter, egg, vanilla extract, and coconut flakes. Press firmly into the bottom of an ungreased 9x13 inch pan.
  2. 2Custard Layer: In a separate bowl, cream together the custard powder, powdered sugar, melted butter and milk. Spread evenly over the base layer.
  3. 3Chocolate Layer: Melt the semi-sweet chocolate chips with melted butter. Spread evenly over the custard layer. Refrigerate for at least 30 minutes, or until firm. Cut into squares and serve.
