Ingredients

  • 1 cup Red Lentils
  • 1 cup Basmati Rice
  • 3 large Onions
  • 3 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 4 cups Water

Instructions

  1. 1Rinse the red lentils and rice thoroughly.
  2. 2In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the lentils, rice, cumin, coriander, salt, and pepper. Stir to combine.
  3. 3Add water, bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils and rice are cooked through and the water is absorbed.
  4. 4While the lentils and rice are cooking, slice the onions into thin rings.
  5. 5In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized (about 20-25 minutes).
  6. 6Once the lentils and rice are cooked, fluff with a fork and transfer to a serving bowl. Top with the caramelized onions and serve warm.
