Mujadara with Caramelized Onions (Soy-Free Version)

A comforting Lebanese dish of lentils, rice, and caramelized onions, prepared with olive oil instead of any soy-based products. This is a completely soy-free take on the classic dish.

Ingredients

  • 1 cup Brown or green lentils
  • 1 cup Long-grain rice
  • 3 large Onions
  • 1/4 cup Olive oil
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 3 cups Water

Instructions

  1. 1Rinse the lentils and rice separately.
  2. 2In a large pot, combine lentils and water. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are almost tender.
  3. 3Add the rice to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  4. 4While lentils and rice are cooking, slice the onions thinly.
  5. 5Heat olive oil in a large skillet over medium heat.
  6. 6Add sliced onions and cook slowly, stirring occasionally, until caramelized and golden brown, about 25-30 minutes.
  7. 7Stir cumin, salt, and pepper into the lentil and rice mixture.
  8. 8Top with caramelized onions before serving.
