Ingredients

  • 1 cup Brown or Green Lentils
  • 1 cup Basmati Rice
  • 3 tbsp Olive Oil
  • 3 large Onions
  • 3 cups Water
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Rinse the lentils and rice separately.
  2. 2In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the lentils and rice, and toast for 2-3 minutes, stirring constantly.
  3. 3Add the water, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until the lentils and rice are tender and the water is absorbed.
  4. 4While the lentils and rice are cooking, thinly slice the onions.
  5. 5In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 20-25 minutes. Be patient and don't rush the process.
  6. 6Once the lentils and rice are cooked, fluff them with a fork and transfer to a serving dish.
  7. 7Top with the caramelized onions and serve.
