Mujadara (Lentils and Rice)

A hearty and comforting dish of lentils and rice, topped with caramelized onions. A classic vegetarian staple in Middle Eastern cuisine.

Ingredients

  • 1 cup Brown lentils
  • 1 cup Basmati rice
  • 2 large Onions
  • 4 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Water

Instructions

  1. 1Rinse the lentils and rice separately.
  2. 2Slice the onions into thin strips.
  3. 3Heat olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown (about 20-25 minutes). Remove half of the caramelized onions and set aside for garnish.
  4. 4Add the lentils, rice, cumin, salt, and pepper to the pot. Stir well.
  5. 5Add the water and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils and rice are cooked and the water is absorbed.
  6. 6Fluff the mixture with a fork and serve, topped with the reserved caramelized onions.
