Mote con Huesillos (Dairy-Free)

A traditional Chilean summer drink made with cooked wheat berries (mote), dried peaches (huesillos), and a sweet syrup. Naturally dairy-free and refreshing.

Ingredients

  • 1 cup Dried peaches (huesillos)
  • 1 cup Wheat berries (mote)
  • 8 cups Water
  • 1/2 cup Sugar
  • 1 each Cinnamon stick
  • 1 strip Orange peel

Instructions

  1. 1Rinse the dried peaches and wheat berries.
  2. 2Soak the dried peaches in 4 cups of water for at least 4 hours or overnight.
  3. 3Cook the wheat berries in 4 cups of water until tender, about 45-60 minutes.
  4. 4In a separate saucepan, combine the soaked peaches (with the soaking water), sugar, cinnamon stick, and orange peel.
  5. 5Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6Let the mixture cool. Remove the cinnamon stick and orange peel.
  7. 7To serve, combine cooked wheat berries and peaches with the syrup in a glass. Add ice if desired.
