Moroccan Mint Tea Popsicles

Ingredients

  • 4 cups Water
  • 2 tbsp Green Tea
  • 1 cup Fresh Mint
  • 0.5 cup Sugar
  • 1 tbsp Lemon Juice

Instructions

  1. 1Pour the 4 cups of water into a medium saucepan and bring it to a rolling boil over high heat. You'll see large, active bubbles covering the surface.
  2. 2Once the water is boiling, carefully add the 2 tbsp of green tea and the 1 cup of fresh mint. Reduce the heat to low, so the water is just gently bubbling, and let it simmer for 5 minutes.
  3. 3Remove the saucepan from the heat. Cover it with a lid and let the tea steep for 10 minutes. This allows the flavors to fully develop.
  4. 4Carefully strain the liquid from the saucepan through a fine-mesh sieve into a bowl or pitcher. Discard the used green tea leaves and mint.
  5. 5Add the 0.5 cup of sugar and the 1 tbsp of lemon juice to the warm tea. Stir well until the sugar is completely dissolved. You should not see any sugar granules at the bottom.
  6. 6Pour the sweetened tea mixture evenly into 6 popsicle molds. Make sure not to overfill them.
  7. 7Place the filled popsicle molds in the freezer. Freeze for at least 4 hours, or until the popsicles are completely solid and firm to the touch.
