Moroccan Bissara (Fava Bean Soup) with Olive Oil Drizzle

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Olive Oil (for drizzling)

Instructions

  1. 1Rinse the dried fava beans and soak them in water for at least 4 hours, or overnight.
  2. 2Drain the fava beans and transfer them to a large pot.
  3. 3Add 6 cups of water, minced garlic, cumin, paprika, salt, and pepper.
  4. 4Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the fava beans are very soft and tender.
  5. 5Use an immersion blender to blend the soup until smooth.
  6. 6Taste and adjust seasoning as needed.
  7. 7Serve hot, drizzled with olive oil.
