Moroccan Bissara (Fava Bean Soup)

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 1 tsp Ground Cumin
  • 1 tsp Salt
  • 4 tbsp Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1/2 tsp Aleppo Pepper

Instructions

  1. 1Rinse the fava beans and place them in a large pot.
  2. 2Add water and bring to a boil. Reduce heat and simmer for 45 minutes, or until the beans are very tender.
  3. 3Add garlic, cumin, and salt. Use an immersion blender to blend the soup until smooth.
  4. 4Serve hot, drizzled with olive oil and lemon juice. Sprinkle with Aleppo pepper.
