Moroccan Baked Salmon with Preserved Lemon and Olives

Ingredients

  • 4 6 oz Salmon fillets
  • 1/4 cup Preserved lemon
  • 1/4 cup Green olives
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Finely chop the 1/4 cup preserved lemon and 1/4 cup green olives into small pieces.
  3. 3In a small bowl, whisk together the 2 tablespoons olive oil, 2 cloves garlic (minced), 1 teaspoon paprika, 1/2 teaspoon cumin, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  4. 4Arrange the 4 6 oz salmon fillets on a baking sheet lined with parchment paper.
  5. 5Evenly spread the olive oil and spice mixture over the top of each of the 4 salmon fillets.
  6. 6Sprinkle the chopped 1/4 cup preserved lemon and 1/4 cup green olives over the salmon fillets.
  7. 7Bake for 12 to 15 minutes. The salmon is cooked through when it flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
  8. 8Garnish with the 2 tablespoons fresh parsley before serving.
