Ingredients

  • 1 cup Rice Flour
  • 1/4 cup Chickpea Flour
  • 1/2 cup Shredded Coconut
  • 1/4 cup Chopped Scallions
  • 1/4 cup Red Onion
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Turmeric Powder
  • For frying as needed Vegetable Oil
  • 3/4 cup Water

Instructions

  1. 1In a bowl, combine rice flour, chickpea flour, shredded coconut, scallions, red onion, salt, and turmeric powder.
  2. 2Gradually add water, mixing until a smooth batter forms. The batter should be thick enough to hold its shape when dropped into hot oil.
  3. 3Heat vegetable oil in a deep skillet or wok over medium heat.
  4. 4Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  5. 5Fry for 2-3 minutes per side, or until golden brown and crispy.
  6. 6Remove the fritters from the oil and drain on paper towels.
  7. 7Serve immediately.
