Ingredients

  • 2 cups Black-Eyed Peas
  • 1 Red Bell Pepper
  • 1 Onion
  • 1/2 Scotch Bonnet Pepper
  • 1 cup Vegetable Broth
  • 2 tbsp Vegetable Oil
  • 5 oz Spinach
  • 1/2 cup Sweetcorn
  • 1 tsp Salt
  • 1 tbsp Crayfish Powder (vegan)
  • 6 Banana Leaves or Foil

Instructions

  1. 1Soak the black-eyed peas in water for at least 4 hours, or preferably overnight.
  2. 2Drain the peas and remove the skins by rubbing them together in your hands under running water.
  3. 3Blend the peeled peas, red bell pepper, onion, and scotch bonnet pepper with the vegetable broth until smooth.
  4. 4Heat the vegetable oil in a pan over medium heat. Add the blended mixture and cook for 5-7 minutes, stirring constantly, until it thickens slightly.
  5. 5Stir in the spinach, sweetcorn, salt, and crayfish powder (or nori flakes).
  6. 6Wrap spoonfuls of the mixture in banana leaves or foil, creating small packets.
  7. 7Steam the packets in a steamer or pot with water for 45-60 minutes, or until the moi moi is firm and cooked through.
  8. 8Serve hot or cold.
