Ingredients
- 2 cups Black-eyed peas
- 1 large Red bell pepper
- 1 medium Onion
- 1 small Scotch bonnet pepper
- 0.25 cup Vegetable oil
- 0.5 cup Smoked fish flakes
- 3 Boiled eggs (optional)
- 2 Beef bouillon cubes
- 1 teaspoon Salt
- 2 cups Water
Instructions
- 1Place the 2 cups of black-eyed peas in a large bowl and cover with water. Let them soak for at least 4 hours or overnight. Drain the peas, then peel the skins off each pea. Rinse the peeled peas very well.
- 2Combine the peeled peas, the 1 large red bell pepper (cored and roughly chopped), the 1 medium onion (peeled and roughly chopped), and the 1 small scotch bonnet pepper (stem removed, seeds can be removed for less heat) in a blender. Add the 2 cups of water and blend until the mixture is completely smooth. You may need to do this in batches depending on the size of your blender.
- 3Pour the smooth blended mixture into a large bowl. Add the 0.25 cup of vegetable oil, the 0.5 cup of smoked fish flakes, the 2 beef bouillon cubes (crumbled), and the 1 teaspoon of salt. Stir everything together thoroughly until well combined.
- 4If you are using the 3 boiled eggs, cut each one into 4 equal pieces.
- 5Prepare your steaming setup. Lightly grease 6 small ramekins. If using moi moi leaves, prepare them according to how you usually would. Spoon the moi moi mixture into the prepared ramekins or leaves, filling them about three-quarters full. If using, place one piece of the cut boiled egg into the center of each portion.
- 6Place the filled ramekins or leaves into a steamer basket set over a pot of boiling water. Ensure the water level is below the bottom of the steamer basket. Cover the steamer tightly. Steam for 45-60 minutes. The moi moi is done when it feels firm to the touch and a toothpick inserted into the center comes out clean. Check the water level in the pot every 15-20 minutes and add more boiling water if it gets too low to ensure continuous steaming.
- 7Carefully remove the steamer from the heat. Let the moi moi cool in the ramekins or leaves for about 10 minutes before serving. This allows it to set further.
