Moi Moi (Bean Pudding) - Soy Free

A steamed bean pudding made from blended black-eyed peas and peppers. This recipe uses coconut milk to replace soy.

Ingredients

  • 2 cups Black-Eyed Peas
  • 1 medium Red Bell Pepper
  • 1/2 small Scotch Bonnet Pepper
  • 1 medium Onion
  • 1 cup Coconut Milk
  • 1/4 cup Palm Oil
  • 1/2 cup Fish or Chicken Broth
  • 1 tsp Salt
  • 2 tbsp Ground Crayfish
  • 3 large Hard-Boiled Eggs (optional)

Instructions

  1. 1Place the 2 cups of black-eyed peas in a large bowl and cover with water. Let them soak for at least 3 hours, or preferably overnight. Drain the peas and rub them between your hands to loosen the skins. Rinse the peas thoroughly to remove the skins.
  2. 2Combine the peeled 2 cups of black-eyed peas, 1 medium red bell pepper, 1/2 small scotch bonnet pepper, and 1 medium onion in a blender. Blend until you have a smooth paste.
  3. 3Transfer the blended paste to a large bowl. Add the 1 cup of coconut milk, 1/4 cup of palm oil, 1/2 cup of fish or chicken broth, 1 tsp of salt, and 2 tbsp of ground crayfish. Stir everything together until well combined.
  4. 4Grease 6 small heat-proof containers. Alternatively, line the containers with banana leaves. Carefully pour the moi moi mixture into the prepared containers, filling them about three-quarters full.
  5. 5If using, place pieces of the 3 large hard-boiled eggs into the center of the moi moi mixture in each container.
  6. 6Arrange the filled containers in a steamer basket over a pot of boiling water. Cover the steamer and steam for 45 to 60 minutes. The moi moi is ready when it is firm to the touch and a knife inserted into the center comes out clean.
  7. 7Carefully remove the containers from the steamer. Let the moi moi cool slightly in the containers for about 10 minutes before inverting them onto serving plates.
