Ingredients

  • 1 cup Glutinous Rice Flour (Mochiko)
  • 1/2 cup Sugar
  • 1 cup Water
  • 1/4 cup Cornstarch
  • 1 pint Dairy-Free Ice Cream

Instructions

  1. 1Let the dairy-free ice cream soften slightly, then scoop into small balls and place on a parchment-lined baking sheet. Freeze until solid.
  2. 2In a microwave-safe bowl, whisk together the glutinous rice flour, sugar, and water until smooth.
  3. 3Cover the bowl with plastic wrap and microwave on high for 2 minutes. Stir well and microwave for another minute, or until the mixture is translucent and sticky.
  4. 4Dust a clean surface with cornstarch.
  5. 5Turn the mochi dough out onto the cornstarch and let it cool slightly.
  6. 6Divide the mochi dough into small portions. Flatten each portion into a thin circle.
  7. 7Place a frozen ice cream ball in the center of each mochi circle. Wrap the mochi dough around the ice cream, pinching to seal. Roll gently to smooth.
  8. 8Place the mochi ice cream balls back on the baking sheet and freeze for at least 30 minutes before serving.
