Miso Soup with Tofu and Wakame

Ingredients

  • 4 cups Dashi (vegan)
  • 3 tbsp Miso paste
  • 1 block Firm tofu, cubed
  • 2 tbsp Wakame seaweed, dried
  • 2 tbsp Green onions, sliced

Instructions

  1. 1Pour the 4 cups of Dashi (vegan) into a large heavy-bottomed pot. Heat over medium-high heat until it reaches a gentle simmer, about 5-7 minutes. You will see small bubbles rising from the bottom of the pot.
  2. 2While the dashi is heating, measure 1/2 cup of the heated dashi from the pot into a small bowl. Add the 3 tablespoons of Miso paste to this bowl. Whisk these together until the miso paste is completely dissolved and the mixture is smooth.
  3. 3Carefully pour the smooth miso mixture back into the large heavy-bottomed pot with the rest of the dashi. Stir gently to combine everything evenly.
  4. 4Add the 1 block of Firm tofu, cubed, and the 2 tablespoons of Wakame seaweed, dried, to the pot. Stir gently. Let the soup simmer for 2-3 minutes, or until the wakame seaweed has softened and rehydrated.
  5. 5Ladle the soup into bowls. Garnish with the 2 tablespoons of Green onions, sliced, and serve immediately.
